In general, people on there tend to overplay because they're in a "figure it out and play something that fits" mode rather than a "play for the song" mode.

I'm sure almost all of them would end up toning down their playing if they were to really learn the song.

That very young British black girl was the worst example of it, but n knock on any of them and it's a blast to watch.

Agree. I have really enjoyed those, and it's just fun to see the fairly spontaneous work of fashioning a part to the music. Even better when it's a band and each player is making little adjustments to parts on the fly as a whole piece gets worked up together. That's real magic, which is a bit lost in today's age. Some still do it.
